abstract | A method is used in the manufacture of yoghurt that can reduce the damage of liver. The first step is the ultra-heat treatment of the milk solution. After heat treatment the medium is cooled to inoculation temperature 37 to 42 DEG C. In fermentation of multi-strain cultures contain 10<SP>5</SP> to 10<SP>6</SP> CFU/mL Lactobacillus acidophilus, 10<SP>6</SP> to 10<SP>7</SP> CFU/mL Streptococcus thermophilus, 10<SP>6</SP> to 10<SP>7</SP> CFU/mL Lactobacillus delbrueckii subsp. bulgaricus. Cool the culture to terminate lactobacteria growth when it propagated to 10<SP>6</SP> to 10<SP>10</SP> CFU/mL. The second step is to dissolve the 0.02 to 0.06% Vit C, 0.1 to 0.5% alanine, 0.2 to 0.6% taurine and pectin with 400 to 1600ppm catechins. Then make the ultra-heat treatment of this mix solution. Mixing the yoghurt with this solution. The mix is packed directly into disposable packages. |
