abstract |
This invention is a method for reducing methanol content generated in brewed wine, which solves the problem of excess methanol generated in brewed wine due to the reaction of pectinases. The method of this invention is essentially performed by mixing pectinases with polyphenolic acid in advance, before adding the pectinases into the brewed wine, so that the activity of the pectin methyl esterase (PE) enzyme in the pectinases is reduced while not inhibiting the activity of other enzymes very much. Thus this method of this invention has advantages of reducing the methanol content generated in the brewed wine without influencing other physical properties. |
