abstract This invention relates to a process of co-solvent modified supercritical carbon dioxide extractions of cholesterol and free amino acids from egg powder of soft-shell turtle, mainly characterized in using ethanol or water at a suitable proportion as co-solvent in order to increase the removal rate of cholesterol and the extraction rate of free amino acids from egg powder of soft-shell turtle with supercritical carbon dioxide, so as to produce egg powder of soft-shell turtle with low cholesterol, and reduce the amount of carbon dioxide used and shorten the extraction time.
