abstract | It is intended to provide a lactic acid bacterium which is capable of producing gamma-aminobutyric acid (GABA) even in the coexistence of lactic acid and sodium chloride in the medium at the initiation of the culture; and a method of producing a culture product containing GABA. More specifically speaking, a lactic acid bacterium Lactobacillus rennini, which is capable of producing GABA even in the coexistence of lactic acid and sodium chloride in the medium at the initiation of the culture, is isolated from soy sauce moromi (mash). Then, this lactic acid bacterium is inoculated into a medium containing L-glutamic acid and/or its salt and cultured therein. Thus, a culture product containing GABA can be obtained. |
