This invention provides a composition for lowering glycemic index (GI) of foods or feeds. It comprises a guar bean protein, and a galactomannan decomposition of products, such as: A low glycemic index food contains polygalactosyl mannose, gliadin and glutenin with a specific ratio. One low glycemic index food contains polygalactose and/or a polygalactose derivative, gliadin and glutenin with a specific ratio. One kind of low glycemic index food contains polygalactosyl mannose, amylose and amylopectin with a specific ratio. Another low glycemic index food contains specific polygalactose and/or a polygalactose derivative, amylose and amylopecin with a specific ratio. |
