abstract | A foamable water-in-oil type emulsion composition containing fats comprising one or more diglycerides and a liquid sugar, wherein (a) the fats have a solid-fat content at 25 DEG C of 0.5 to 5%, (b) the content of C16-18 unsaturated diglycerides in the fats is 40 wt.% or higher, and the proportion of the fats to the liquid sugar is from 1/0.5 to 1/4. The composition has satisfactory melt-ability in the mouth and satisfactory shape retention at room temperature. It further has a low specific gravity and gives an excellent feeling in the mouth. |
