abstract The invention relates to a method for producing fatty acid esters from fatty acid triglyceride and in particular animal and vegetable fats and fats by transesterification with a mono-valued, low molecular weight alcohol in the presence of a homogeneous or heterogeneous catalyst. In accordance with the invention, the resulting fatty acid ester is removed from the reaction mixture using a near-critical extractive agent. In this way, fatty acid esters are obtained with a high yield and excellent purity. A low pressure gas with a reduced temperature of about 0.7, preferably equal to or greater than 0.7, is preferably used as the extractor. Preferred removal agents are carbon dioxide, propane, butane, dimethyl ether, ethyl acetate or mixtures thereof.
