abstract The present invention relates to the use of an enzymatic extract of animal origin in the manufacture of cheese based on camel, goat and cow milk. This enzymatic extract obtained from the Kaolin layer of the chicken gizzard has a high milk coagulation activity, in particular camel milk which is known for its inability to process. The contribution of the process of this invention is the resolution of the difficulties of the coagulation of camel milk. A fresh cheese having very acceptable organoleptic characteristics is thus obtained.
