abstract | The invention relates to the dairy industry, in particular to the technology for the production of creamy cakes on a curd basis. The aim of the invention is to improve the quality of the finished product, increase its t storage stability and expand the range. When implementing the method, a milk-cream syrup is prepared by mixing milk in the amount of 9-35% of the mass of the ROTOVA product, cream and right-, sugar until complete dissolution. The resulting syrup is pasteurized and cooled. Then it is fed to the dispersing device, and the low-fat cottage cheese is also added there.
