titleOfInvention Saccharomyses serevisae yeast strain used for production of bakery yeast
abstract This invention relates to the yeast industry and is a strain of the yeast SACCHAROMYCES CEREVISIAE VKPM U-824 for the production of baker's yeast. The aim of the invention is to obtain a yeast strain with high maltase and zymase activity and the ability to accumulate more biomass. The strain is isolated from cane sugar and is stored in the collection of the Kiev Technological Institute of Food Industry and in the culture collection of the Museum of Industrial Microorganisms VNIIgenetika. Yeast cells multiply by budding, form spores, form a dense sediment on liquid malt and molasses wort, the optimum reproduction temperature is 30 ° C, pH 4.8-5.0, optional anaerobes. Assimilate glucose, sucrose, maltose, galactose, melibiosis, raffinose, weakly - xylose, arabinose, sorbose. Assimilate ethyl alcohol, glycerin, acetic and lactic acid. Biomass accumulation - 73-78 g / l, α - glucosidase activity - 40 minutes, winter activity - 21 minutes, lifting power - 12 minutes. 1 tab.
