titleOfInvention Method of producing fructose syrup from inulin-containing raw material
abstract This invention relates to the food industry. The method allows to obtain a fructose-containing syrup. high nutritional value while reducing the loss of sugars from decomposition. The purpose of the invention is to improve the nutritional quality of the syrup and the content of fructose in it. The method of obtaining a fructose syrup from inulin containing syphol provides for chopping Jerusalem artichoke tubers, feeding the crushed syphonic acid to the extractor and extracting it with water containing edible ortho-phosphoric acid in an amount of 0.4-0.5% by weight, at a temperature of 80-90 C. During the extraction process, hydrolysis of the carbohydrate complex in the extract to lower fructans occurs. The process of extraction and hydrolysis proceeds / at pH 5.0-5.2 for 60 minutes. The extract obtained is filtered through kieselguhr and activated charcoal. After purification of the extract, the second stage of hydrolysis of carbohydrate compounds is carried out by acidifying it to a pH of 4.0-4.2 in an electrodialyzer with bipolar membranes to form fructose.
