abstract The invention relates to bakery production, in particular, to a new strain of yeast used in baking for the preparation of national Uzbek bread products. The aim of the invention is the creation of a high-yield yeast strain. The proposed strain of Saccharomyces cerevisiae 39/15 deposited in CMPM under the number U-517. The strain was obtained by exposing the initial culture to a chemical mutagen. The strain has a fermentation activity of 15.0 ml of CO for 1 h, maltase activity 9E min.
