A method of producing oleuropein by extracting raw olives with lower alcohol, followed by evaporation and processing of the obtained extract with organic solvents and isolating the target product, characterized in that, in order to increase the yield of the target product and simplify the process, extraction is carried out with 90% ethyl alcohol and the resulting extract is treated with acetone, and the selection of the target product is carried out with a mixture of alcohol-chloroform at a ratio of 1: 2-1: 4. |
