A method for preparing stable protein compositions is described in which proteins that are capable of transitioning to a molten globular state are contacted with a negatively charged lipid vehicle, thereby stabilizing the protein against heat-induced aggregation, denaturation, and loss of activity. Protein: phospholipid complex directly stabilizes the secondary and tertiary structure of the protein, and these compositions are useful in high temperature formulations and as novel delivery vehicles. Stable protein compositions prepared in this manner are described. à |
