abstract A process for extracting fatty substances and lipids from proteinaceous material consisting of fish or other aquatic animals to obtain a protein product suitable for use as a nutritive, in which extraction fats and other objectionable taste- and odour-producing substances such a phospholipides are removed from the proteinaceous material, comprises extracting the proteinaceous material moistened with water, with a polar solvent comprising one or more of n-butanol, sec-butanol, and iso-butanol, the extraction being carried out at a temperature below the azeotropic boiling point of the solvent with water. A preferred temperature is 70 DEG C.
