abstract Novel compounds of formula <FORM:1061734/C2/1> wherein X represents oxygen or sulphur, and one of the symbols R1, R2 and R3 represents a methyl radical, the other two representing hydrogen, are prepared by subjecting a monohalogenated methylpyrazine to a treatment by known methods for the replacement of the halogen atom by a methylmercapto or methoxy group. The mono-halogenated methylpyrazines may be prepared by treating methylpyrazine with hydrogen peroxide and reacting the resulting N -oxides with a phosphorus oxyhalide, or by direct halogenation of methylpyrazine with free halogen.ALSO:Flavouring compositions comprise compounds of formula <FORM:1061734/A1-A3/1> wherein X represents oxygen or sulphur, and one of R1 R2 and R3 represents a methyl radical, the other two representing hydrogen, and a non-toxic diluent suitable for human consumption. Suitable diluents include propylene glycol, triacetin, benzyl alcohol and nearly tasteless oils such as peanut oil. The compounds may also be processed with other flavouring substances into flavour essences which can be used as such or after dilution, e.g. in the solvents mentioned above. An example describes a composition comprising maltol, g -nonalactone, benzaldehyde, acetylpropionyl and a mixture of isomeric methyl-methylonercaptopyrazines in benzyl alcohol and triacetin. The compositions are used to impart a flavour of roasted hazelnuts, peanuts or almonds to foodstufls, beverages and pharmaceutical preparations, such as chocolate, ice-cream, puddings, baking products, confectionery and milk products such as yogurt, edible fats, milk and creams.
