The method for obtaining a chlorophyll-containing product as a food coloring is characterized by freezing the green mass of the vegetative waste of the cucumber plant, placing the green mass in 95% ethyl alcohol in the ratio of green mass: extractant as 1:3-1:4, homogenizing with an immersed blender at a speed of 2000 revolutions per minute with an extraction duration of 10-15 minutes with heating in a water bath at a temperature of 45-50°C, followed by infusion for 24 hours at room temperature 18-20°C and filtration.EFFECT: invention makes it possible to create a method for producing a chlorophyll-containing product as a food coloring with a high content of green pigment by processing vegetative waste from the green mass of a greenhouse cucumber.1 cl, 2 dwg, 8 ex
