abstract | FIELD: food industry.SUBSTANCE: method for the production of a non-soy protein product from oilseeds, having a protein content of at least 60 wt.% (N × 6,25) per the weight of dry substance, is carried out as follows. A protein source is extracted from non-soy oilseeds with water to cause protein solubilization and obtain an aqueous protein solution. The aqueous protein solution is at least partially separated. The pH is adjusted to a value to obtain an acidified protein solution. A non-soy protein product from oilseeds is a protein product from canola, and the pH of an aqueous solution of protein from canola is adjusted to 1.5-2.5, or sunflower or peanut protein product, and the pH is adjusted to 1.5-3.5, or hemp, safflower or mustard protein product, and the pH is adjusted to 1.5-4.0, or cotton, flax or sesame protein product, and the pH is adjusted to 1.5-3.0. Solid material insoluble in acidic medium is separated from the acidified protein solution. If necessary, the acidified protein solution is concentrated using the selective membrane technique, filtered and/or dried.
