abstract | FIELD: dairy industry.SUBSTANCE: method for obtaining modified micellar casein concentrate is carried out in the following way. The volume of skimmed milk is provided and used. The process of microfiltration of the volume of skimmed milk is performed to obtain micellar casein concentrate. Micellar casein concentrate is treated with carbon dioxide by mixing carbon dioxide with at least part of micellar casein concentrate to reduce pH of micellar casein concentrate and acidify micellar concentrate and to solubilize one or more components of micellar casein concentrate. The mixture of carbon dioxide and micellar casein concentrate is ultrafiltered to remove at least one or more solubilized components of micellar casein concentrate to obtain modified micellar casein concentrate.
