abstract | FIELD: food industry.SUBSTANCE: group of inventions relates to the field of encapsulation technologies, in particular the encapsulation of active ingredients, such as corrigents. The proposed granular product of encapsulation by extrusion includes: (A) an encapsulate encapsulated in (B) a polymer glassy matrix comprising at least one modified starch, at least one low-molecular carbohydrate and from 0.5% to 10% by weight of at least one insoluble fiber selected from a group consisting of apple fiber, corn fiber, sugar cane fiber, oat fiber, wood fiber, rice fiber and mixtures thereof. At the same time, the matrix contains from 49% to 94% by weight of modified starch; the encapsulate content is from 0.01% to 20% by weight based on the total weight of the encapsulated product; the average particle size of the granular product is from 0.1 mm to 7 mm; at least 80% of the particles in the granular product are intact, based on the total number of particles in the granular product. A food system containing the above-mentioned granular product and a method for producing such a granular encapsulation product by extrusion are also proposed, including: (i) mixing and melting matrix components, including the matrix and encapsulate, in an extruder in the collection to form a viscous dispersion, (ii) forming, extruding and slicing a viscous dispersion to obtain a granular encapsulation product by extrusion, and (iii) drying and cooling the granular encapsulation product by extrusion to glassy state.EFFECT: group of inventions provides for the production of encapsulation product with a high level of integrity.37 cl, 6 dwg, 1 tbl, 2 ex |
