abstract | FIELD: food industry.SUBSTANCE: invention relates to the field of the food industry. A food concentrate enriched with polyphenols is proposed, including a freeze-dried powder of berry cake and dried oyster mushroom with a particle size of no more than 0.3 mm, the disaccharide palatinose and the prebiotic inulin at the following ratio of the initial components, wt. %: berry cake 30-60; oyster mushroom 16-24; palatinose disaccharide 15-20; inulin prebiotic 0.6-0.8. At the same time, black currant cake, and/or honeysuckle, and/or blueberries, and/or aronia, and/or lingonberries, and/or cranberries are used as berry cake in equal parts. The food concentrate may contain pectin in an amount of 0.3-0.5% of the total mass of the composition. It may contain native potato starch in an amount of 2-2.5% of the total mass of the composition. It may contain flour, buckwheat flour is used, and/or flax, and/or corn, and/or oat, and/or nut, and/or apple flour in an amount of 5-12% of the total weight of the composition.
