abstract |
FIELD: fat and oil industry.SUBSTANCE: oil containing: (i) at least 30 wt % of one or more polyunsaturated fatty acids in which there are at least 4 double bonds; (ii) at least one first antioxidant, wherein at least one first antioxidant is tocopherol, wherein said oil contains tocopherol in amount of about 1000 ppm to about 3000 ppm; (iii) less than about 750 ppm of a second antioxidant selected from ascorbic acid derivatives; and (iv) less than about 150 ppm of lecithin. Final oil containing above-described oil and at least one other oil. Oil is used for manufacture of a food product or an additive to a food product. Food product manufacture method includes introduction of oil into a food product.
