FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular, to method for storage of animal products in supercooled state. Animal product is placed in a refrigerating chamber, in which the temperature of the cooling medium is set equal to the half-sum of the cryoscopic temperature and the maximum permissible temperature of supercooling, which are determined experimentally for each type of product. At that, fluctuations of air temperature during storage shall not exceed ±1 °C.EFFECT: invention provides prolonged storage of products of animal origin with preservation of all taste properties inherent to cooled product before processing.1 cl, 2 ex |
