abstract FIELD: dairy industry. n SUBSTANCE: method for production of adapted milk mixture based on mare's milk for baby food includes the following stages: mare milk with fat content of 0.9–1.2 % is condensed at temperature of 50–55 °C to weight ratio of dry substances of 28–32 %, then condensed milk is heated to 55–60 °C and adding to it with constant stirring maltodextrin, corn oil, rapeseed oil and aqueous solution of mineral-vitamin premix "GS-3157" or "GS-3158" with weight ratio of premix 18÷20 %, the obtained mixture is stirred for 30–35 minutes, then pasteurized at 61–65 °C for 25–30 minutes, homogenised at temperature 58–62 °C and pressure of 14 MPa, then cooled and sublimated drying at temperature from minus 35 °C to plus 35 °C to content of moisture content in finished product 2.0–2.5 %. n EFFECT: invention allows to manufacture a product for baby food with increased biological and nutritive value, improved assimilability, organoleptic, functional properties and quality. n 1 cl, 2 tbl, 10 ex
