abstract FIELD: food industry. n SUBSTANCE: present invention relates to pregelatinised starch having Brabender hot paste viscosity (HPV) of 200 BU to 280 BU when measured at pH not more than 4.5. Examples of food products, which are very useful properties of this starch, include compotes; sauces and tomato based products; sauces for meat dishes; gravy; baby food; puddings; flakes from crushed grain; fruit juices and fruit drinks; fruit and berry puree, such as apple puree; confectionery products, such as textured chewing sweets; cookies, crackers, containing cakes and confectionary flour products; soups and dry powdered mixtures, which can be reduced with water. n EFFECT: this starch is used to impart viscidity and texture of pulp to food product and is resistant to treatment under extreme conditions of high temperatures, acidity and mechanical action. n 14 cl, 4 dwg, 3 tbl
