FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular, to production of meat semi-products, and may be used at meat processing enterprises. Semi-product of pork marinade consists of pieces of milled semi-greased pork and marinade. Marinade contains water, culinary food salt, ground black pepper, as functional additives contains melange, potato starch, table mustard, garlic powder and honey. Quantitative ratio of the semi-finished product ingredients is selected.
