abstract | FIELD: nanotechnologies.SUBSTANCE: invention relates to nanotechnology, in particular to a method of producing nanocapsules, and describes a method of producing stevia extract nanocapsules in a guar gum shell. Method is characterized by that dry extract of stevia is added to a suspension of guar gum in toluene in presence of 0.01 g of glycerol ester with one or two molecules of food fatty acids and one or two molecules of citric acid as a surfactant while stirring at 800 rpm, further methylene chloride is poured, resulting suspension of nanocapsules is filtered and dried at room temperature, while mass ratio of core: shell is 1:1, 1:2 or 1:3.EFFECT: method ensures the nanocapsules producing process simplification and acceleration, reduction in losses during the nanocapsules production, and can be used in the pharmaceutical and food industries.1 cl, 3 ex |
