abstract FIELD: food industry.SUBSTANCE: invention relates to the sugar industry, in particular to methods for the examination of the quality of sugar. Way of organoleptic evaluation of the smell of sugar is to use an array of eight sensors based on piezoelectric resonators with films of polyvinylpyrrolidone, bee glue, dicyclohexane-18-crown-6, bromocresol green, polyethylene glycol succinate, polyethylene glycol PEG-2000, Tween-40, trioctylphosphine oxide, weighing 10–20 mcg, selection in the sampler 5–10 g sugar, closing it tightly to obtain an equilibrium gas phase above the sample, the selection of 3 cmgas phase and entering into the detection cell with sensors attached to it, recording changes in the signals of all sensors ∆F (Hz) for 120 seconds, forming a “visual impression” of the smell in the form of a pie chart, calculating the area of his figure S (Hz⋅c) the calculation of the similarity parameter ε for the analyzed sample and the standard sample by the formula; when the value of ε more than 0.10 make a conclusion about the significant difference between the smell of the sample and standard.EFFECT: method for organoleptic evaluation of sugar odor is proposed.1 cl, 3 tbl, 2 ex
