abstract FIELD: agriculture. n SUBSTANCE: group of inventions relates to the coffee industry. For obtaining dried soluble coffee product having foaming porosity of particles equal to at least 20%, the method is implemented as follows. A liquid coffee extract is obtained, containing the solids of unroasted coffee in an amount of 1 g to 90 g per 100 g of total coffee solids amount. The unroasted coffee solids are obtained by the extraction of crude, also known as green, coffee beans with water at a temperature above 130°C without using an organic solvent. Gas is introduced into the liquid coffee extract and the extract is dried. To obtain a foamed coffee drink, the liquid coffee extract is obtained, containing unroasted coffee solids in an amount of 1 g to 90 g per 100 g of the total coffee solids amount, by introducing gas bubbles in the liquid coffee extract to create foam in the beverage. The use of the unroasted coffee solids in an amount of 1 g to 90 g per 100 g of the total coffee solids amount for improving the foaming properties of liquid where the unroasted coffee solids are obtained by the extraction of crude, also known as green, coffee beans by water at a temperature above 130°C without using an organic solvent. n EFFECT: group of inventions is to provide a dried soluble powder comprising solid particles of unroasted coffee in an amount sufficient to improve the foaming properties of the liquid, wherein the unroasted coffee solids are obtained by extraction in a simple way using hot water without the need for concentration and purification of the active components and without destruction of the unroasted coffee solids in the extraction process, the production process simplification is provided. n 18 cl, 1 dwg,1 tbl, 1 ex
