abstract | FIELD: food industry. n SUBSTANCE: invention relates to production of products of dietary preventive nutrition and concerns functional triglyceride composition for production of food products. Functional triglyceride composition consists of transesterified structure-forming component, obtained by enzymatic transesterification of a mixture of solid and semisolid vegetable oils of lauric and non-lauric group in a series of flow-type reactors, liquid vegetable oils and biologically active substances. Composition contains no trans-isomers of saturated fatty acids or contains same in amount of less than 1 % of total fatty acids. Biologically active substances are represented by essential fatty acids of omega-6 and omega-3 families with total content of not less than 15 % of total amount of fatty acids at ratio between them equal to (1–15):1, including omega-3 fatty acids not less than 1 % of total fatty acids, as well as tocopherols and tocotrienols in amount of not less than 0.015 % of weight fraction composition.
