FIELD: food industry. n SUBSTANCE: invention relates to food industry. A method for producing a precipitate rich mannose oligosaccharides (MOS) from coffee involves obtaining from remaining material after coffee extraction and preparing a MOS-containing hydrolysate. Further, MOS-containing hydrolysate from coffee material is at least partially dissolved in water. method then comprises contacting MOS-containing hydrolysate with an organic solvent to form a suspension and isolating precipitate. Also disclosed are a product containing said precipitate and use of said method to reduce unpleasant taste remaining after extracting coffee material for use as an additive to a beverage or food. n EFFECT: invention enables to remove unpleasant taste from a MOS-containing hydrolysate and to obtain a precipitate with high content of MOS with polymerisation degree of 5 to 10. n 15 cl, 3 dwg, 1 tbl |
