FIELD: food industry. n SUBSTANCE: present invention relates to food products enriched with whole grains. One proposes a food product including baking powder, a hydrolysed whole grain composition and α-amylase or its fragment; when α-amylase or its fragment is in an active state it does not display any hydrolytic activity with regard to food fibres; the food product moisture content is equal to no less than 10 wt %. Additionally, one proposes a method for the manufacture of a food product and a combined product containing the food product, for instance, a combined dry cookie, combined dry waffles, flour confectionary goods, crispy breads and waffle cones filled with ice-cream. n EFFECT: invention allows obtaining food products supplemented with hydrolysed whole grains without detriment to the taste and organoleptic properties. n 50 cl, 8 dwg, 5 tbl, 5 ex |
