abstract FIELD: food industry. n SUBSTANCE: method envisages cheese whey collection, separation, pasteurisation and cooling, the nanofiltration process implementation with usage of roll-type composite polymer membranes at a temperature of 50 - 55°C, under gradual pressure boost in the membrane apparatus channel downstream the process from 10 to 20 bar, active whey acidity (pH) decrease to 5.8-5.9 units with the help of 20%-citric acid solution, determination of demineralisation degree and ash weight fraction depending on modification of specific electric conductivity of the whey concentrate downstream the process and the ready concentrate pasteurisation. n EFFECT: invention allows to reduce whey volumes, increase the concentrate storage life, reduce load on electrodialysis plants, improve the system of technical control of the concentrate manufacture by way of reduction of time for determination of demineralisation degree and ash weight fraction, enhance used membranes permeability and reduce environment contamination with milk processing components. n 3 dwg, 1 tbl, 2 ex
