abstract | FIELD: food industry.SUBSTANCE: according to the first version, the product contains water, a natural colorant, chosen from the group consisting of beta carotene, black carrots, natural apple extract and their combinations, and the colorant bleaching inhibitor containing modified isoquercitrine (EMIQ). EMIQ introduction is essentially used for inhibition of bleaching of the beverage product colorant exposed to ultraviolet irradiation. EMIQ may be effective for prevention of the colorant bleaching even in the presence of ascorbic acid that promotes natural colorants bleaching. According to the second version, the product contains water, a black carrot colorant, dumaric acid and EMIQ in an amount from 30 w.p. to 1000 w.p. The method for inhibition of bleaching of the beverage product exposed to light impact involves obtainment of a beverage composition containing a colorant chosen from the group consisting of beta carotene, black carrots, natural apple extract and their combinations, and addition of the colorant bleaching inhibitor into the beverage composition in an amount efficient for the colorant bleaching inhibition.EFFECT: invention allows to preserve the colour of a beverage coloured by the colorant and obtain a beverage product with the preset appearance, taste and properties beneficial for health.7 cl, 7 dwg, 5 tbl, 10 ex |
