abstract | FIELD: food industry. n SUBSTANCE: invention is intended for usage in food industry, in particular, to food fibres production. The food fibres extracted from fruit or vegetable by-products has molecular weight equal to approximately 5000 - 8000 g/mol or pectin oligosaccharides with molecular weight equal to approximately 300 - 2500 g/mol. The food fibres may be extracted through usage of physical methods or a combination of a physical method of by-products cells walls destruction and fermentative hydrolysis. The invention deals with a food products containing extracted food fibres.
