abstract | FIELD: food industry. n SUBSTANCE: recipe components are prepared; part of bulb onions is cut, sauteed in vegetable oil and milled. Then ground pumpkin seeds extraction cake is poured with drinking water and maintained for swelling. Then one mixes the listed components with tomato paste, drinking water, sugar, salt, black hot pepper, allspice, cloves, coriander and laurel leaf. One cooks the mixture and adds acetic acid to produce a sauce. Then one proceeds with carrots and the remaining bulb onions cutting and sauteing in vegetable oil, brined cucumbers cutting and the listed components mixing to produce garnish. Then one performs herring cutting, mealing in wheat flour and frying in vegetable oil, the herring, garnish and sauce packing and subsequent sealing and sterilisation. n EFFECT: method allows to reduce the manufactured target product adhesion to container walls. |
