abstract | FIELD: food industry. n SUBSTANCE: this invention relates to a method for a fodder or food product manufacture. The method envisages the following stages. (i) supply of at least first flow of material containing a meat or fish emulsion, (ii) preparation of a viscous gel containing at least one gel-forming component and liquid by way of liquid introduction into the gel-forming component located inside the mixing chamber by means of the first nozzle unit under a pressure of 30-150 bar (3-15 MPa), (iii) supply of the viscous gel produced at Stage (ii) as at least one second flow of material or as part of such flow, (iv) production of a laminar dispersion of the second material flow in the first material flow in the device for at least partial and incomplete mixing of the first and second material flows so that the second material flow is distributed in the first material flow in the form of drops sized at least 0.3 mm, (v) discharge of the first material flow containing the second material flow in the form of drops through the second nozzle unit and (vi) solidification of the first material flow containing the second material flow in the form of drops. n EFFECT: method implementation allows to reduce inclusion of gas bubbles in the product produced combined with the product preserving an appearance similar to that of meat or fish. n 9 cl |
