abstract FIELD: food industry. n SUBSTANCE: invention relates to the technology for production of fish preserves, in particular, to a method for production of preserves "Rockfish in tomato-and-vegetable sauce". The method envisages preparation of recipe components, carrots and bulb onions cutting, sauteing in vegetable oil and milling, parsley greens milling, the listed components mixing with tomato paste, drinking water, sugar, salt, hot black pepper, allspice and laurel leaf, the mixture cooking and acetic acid addition to produce a sauce, rockfish cutting, the rockfish and the sauce packing, sealing and sterilisation. One additionally uses in the sauce composition ground pumpkin seeds extraction cake that is poured with drinking water (before mixing) and maintained for swelling. The components are used at the following expenditure ratio, weight parts: rockfish - 1662.9; vegetable oil - 11.7; carrots - 100-102.6; bulb onions - 40.6-41.1; parsley greens - 3.7, pumpkin seeds extraction cake - 40, tomato paste in conversion to 30% dry substances content - 128, acetic acid in conversion to 80% concentration - 4.3, sugar - 25.7, salt - 17.1, black hot pepper - 0.14, allspice - 0.14, laurel leaf - 0.12, water till the target product yield is equal to 1000. n EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
