abstract FIELD: food industry. n SUBSTANCE: initial solution containing sucrose is subjected to simultaneous inversion and ion-exchange purification by way of the initial solution contact with activated carbon with pH equal to 2-4.5 at a temperature of 66-70°C. The solution is decoloured with activated carbon at a temperature of 78-80°C during 20-30 minutes and filtered. The filtered solution is condensed till dry substances content is equal to 58% and is subjected to afterfiltration. The produced solution is mixed with stevioside natural sweetener in an amount of 0.5-2.0% of the product weight by way of passing through the cavitation device at a rate of 10-15 m/s at a temperature of 100-102°C and is concentrated in a heat medium flow at a temperature of 115-125°C till moisture content is equal to 1.6%. n EFFECT: sugar-containing product quality improvement. n 1 ex
