abstract FIELD: food industry. n SUBSTANCE: invention relates to food industry. One produces a water solution of 2S and 7S canola protein consisting, predominantly, of 2S protein. One performs isoelectric sedimentation of 2S and 7S canola proteins from the water solution by way of salt addition into the water solution till electrical conductivity is equal to at least approximately 0.3 millisiemens (mSm). The lightly salted water solution pH is conditioned to 2.0 - 4.0. Sedimented 7S protein is removed from the water solution. One extracts canola protein isolate containing protein in an amount of at least approximately 90 wt % (N × 6.25) in conversion to dry weight (d.b.) and including increased content of 2S canola protein in comparison with the water solution of 2S and 7S proteins. n EFFECT: invention allows to manufacture a product with solubility, transparence, thermal stability and amino acid profile. n 14 cl, 2 dwg, 19 tbl, 14 ex
