abstract | FIELD: food industry. n SUBSTANCE: antioxidant is represented by a compound with structural formula n or one of the antioxidant addition salts with pharmaceutically acceptable acids or one of the antioxidant compound ethers or one of the addition salts with pharmaceutically acceptable acids of the said compound ethers. In the structural formula X means a hydroxyimino group (=NOH), A means a hydrogen atom or, combined with B, means a "carbon-to-carbon" bond, B means a hydrogen atom, a hydroxy group or, combined with A, means a "carbon-to-carbon" bond, C means a hydrogen atom, a ketogroup or a hydroxyimino group (=NOH) or, combined with D, means a "carbon-to-carbon" bond, D means a hydrogen atom or, combined with C, means a "carbon-to-carbon" bond, E means a hydrogen atom or, combined with F, means a "carbon-to-carbon" bond, F means a hydrogen atom or, combined with E, means a "carbon-to-carbon" bond, R is a radical.
