abstract FIELD: chemistry. n SUBSTANCE: method of extracting an essentially full lipid fraction from fresh krill involves a step for reducing water content in the krill starting material by washing with ethanol, methanol, propanol or isopropanol in weight ratio from 1:0.5 to 1:5 and separating the lipid fraction from alcohol. The fraction essentially does not contain oxidised lipids and contains triglycerides, astaxanthin and phospholipids. Said fraction can be used as a medicinal agent and/or as a food additive. The method of separating phospholipids from other lipids involves extraction of the full lipid fraction, obtained using pure carbon dioxide or carbon dioxide containing less than 5% ethanol, methanol, propanol or isopropanol. The phospholipids essentially do not contain oxidised lipids. The method of producing krill flour involves extraction of the essentially full lipid fraction and separating the remaining krill starting material. The krill flour essentially does not contain oxidised polyunsaturated fatty acids and other lipids.
