titleOfInvention Method for production of alginate-containing product of brown algae and probiotic product based thereon
abstract FIELD: food industry. n SUBSTANCE: invention relates to brown sea algae processing technology. The method envisages algae preparation and treatment with an acidic solution at pH 2.5-3.5 with the mixture heated to 55-70°C during 1.0-1.5 h. Then, simultaneous with homogenisation at the mincer rotation rate no less than 50 rpm, one performs treatment with an alkaline solution. Then the product is packed. The produced product is used in a prebiotic product containing standardised milk, a bifidobacteria starter, lactic acid bacteria and the above alginate-containing product at a certain ratio of the components. n EFFECT: invention allows to produce a product with sorption properties having stimulatory effect onto the gut microflora. n 7 cl, 2 tbl, 8 ex
