abstract FIELD: food industry. n SUBSTANCE: invention relates to food industry. The method for production of preserves in flavoured oil includes hydrobiont raw material preparation and laying into containers, introduction of a food spice-flavoured oil produced as a result of milled spices infusing in oil after the dense part removal. The spices are selected from among: cinnamon, turmeric, coriander, cardamom or combinations thereof at the following components ratio: oil - 90-98%, spice -2-10%. Then the containers with products are tightly closed and maintained. For extension of the product taste spectrum the raw materials may be treated with smoking preparations prior to laying in. n EFFECT: invention allows to produce a food product with enhanced resistance to microbial decay and improved nutritive and biological value. n 7 tbl, 9 ex
