abstract FIELD: food industry. n SUBSTANCE: mix comprising 20-1000 ppm of dimethyl carbonate and 100-30000 ppm of at least one organic acid is applied for sterilization and preservation of beverages. An organic acid is chosen from a group including dicarboxylic and tricarboxylic acids and their salts. Salts of alkali metals or alkaline-earth metals can be used as salts of dicarboxylic and tricarboxylic acids. Fruit juices or beverages containing fruit juices, or carbonated refreshers, still beverages, noncarbonated refreshers, and beverages containing tea or tea/fruit juice mix. This method provides injection of the above mentioned mix into the beverages subject to preservation. Such beverage contains 20-1000 ppm of dimethyl carbonate and 100-30000 ppm of at least one organic acid. Herewith, the acids are chosen from a group including dicarboxylic and tricarboxylic acids and their salts.
