abstract | FIELD: food industry. n SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. The methods envisage preparation of the recipe components, cutting of girasol, its drying in the microwave field under the specified process parameters, frying and cryo-grinding in liquid nitrogen to produce flour, making dough from high-grade wheat flour, flour from girasol produced as described above, yolks, salt, soda, vegetable oil, phospholipids and water, its moulding into sheets and baking, extraction of cinnamon by liquid nitrogen with the separation of the respective miscella, cutting of scorzonera or oyster plant or dandelion roots, their drying in the microwave field under the specified process parameters, frying, impregnation with the separated miscella along with the simultaneous increase of pressure, pressure reduction down to the atmospheric one with simultaneous freezing of raw material and its cryo-grinding in the medium of the released nitrogen to produce flour, mixing of the latter with cooking fat, dry milk, sweetener "Sladex" and waffle crumbs to produce filling and forming waffles from the sheets and filling. n EFFECT: diabetic waffles have improved texture, coffee taste and flavour with no coffee added to the formula. n 3 cl |
