abstract | FIELD: food industry. ^ SUBSTANCE: group of inventions concerns a manufacturing technique of dietary farinaceous confectionery products for diabetics. The methods imply preparation of the ingredients, cutting of girasol-sunflower, drying in the microwave field at the preset process parametres, roasting and cryogrinding in liquid nitrogen to prepare flour. It is followed with preparation of the dough of flour, girasol-sunflower flour prepared as described above, yolks, salt, soda, vegetable oil, phospholipids and water, forming into sheets and baking, Chinese magnolia-vine extraction in the liquid nitrogen medium and separation of appropriate miscella, cutting of girasol, or girasol-sunflower, or yacon, or chicory, drying in the microwave field at the preset process parametres, roasting, impregnation of separated miscella and pressurisation, depressurisation to air pressure and simultaneous freezing and cryogrinding of raw materials in the precipitated nitrogen medium to produce flour to be mixed with cooking oil, artificial sweetener 'Sladex' and wafer crumb to produce a stuffing and to make wafers of the sheets and stuffing. ^ EFFECT: manufactured diabetic wafers have improved consistence and coffee taste and aroma with no coffee in formulation. ^ 4 cl |
