abstract FIELD: food industry. ^ SUBSTANCE: group of inventions relates to technology of production of diet flour confectionary for feeding of patients with sugar diabetes. Methods include preparation of recipe components, cutting of girasol-sunflower, its drying in SHF field at specified process parametres, after-drying by convective method and cryogrinding in liquid nitrogen obtaining flour, preparation of dough from wheat flour of superior quality, obtained by described technology flour from girasol-sunflower, yolks, salt, soda, vegetable oil, phospholipids and water, its formation in form of sheets and baking, extraction of cardamom with liquid nitrogen with separation of corresponding miscella, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in SHF field at specified process parametres, roasting, soaking with separated miscella with simultaneous increase of pressure, dropping of pressure to atmospheric with simultaneous freezing of raw material and its cryogrinding in medium of released nitrogen obtaining flour, mixing it with cookery fat, dry milk, sweetener "Sladex" and wafer crumbs obtaining filling and formation of wafers from sheets and filling. ^ EFFECT: obtained diabetic wafers have improved consistence and coffee taste and flavour without having coffee in composition. ^ 4 cl
