abstract | FIELD: food industry. n SUBSTANCE: invention refers to oil and fat industry. The emulsion contains oil and water phases, which has a water content of at most about 30 wt % and is stable to coalescence and inversion, when exposed to conditions including: extrusion of mixture of emulsion of oil in water, together with a solid matrix in the mass ratio of 1:0.5 up to about 1:5 by heating at a temperature of at least equal to melting temperature of the mixture or above, for obtaining an extruded product, and increasing in volume in a vacuum of in such a manner obtained extruded product for obtaining a solid product having a water content of at most about 10 wt %. The solid product consists of emulsion of oil in water, extruded with a solid matrix and expanded in volume in vacuum. The emulsion includes an oil phase comprising one or more fat components, and the water phase, and the solid product, self-dispersing at its addition to the aquatic medium.
