abstract FIELD: food industry. ^ SUBSTANCE: invention relates to technology for production of flour confectionery products. Methods provide for performance of the following operations. Preparation of formula components, cutting of yacon, its drying in microwave field at specified parametres of the process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Production of dough from prime wheat flour, flour produced from yacon using described technology, yolks, salt, soda, vegetable oil, phospholipids and water taken as per specified ratio, its moulding in the form of sheets and baking. Extraction of allspice with separation of according miscella. Cutting of girasol or girasol-sunflower or yacon or chicory, its drying in microwave field at specified parametres of the process, impregnation with separated miscella with simultaneous increase of pressure. Pressure reduction down to atmospheric value with simultaneous freezing of raw materials and its cryo-grinding in medium of released nitrogen to produce flour. Its mixing with culinary fat, dry milk, sugar powder and waffle crumb to make filling. Making waffles from sheets and filling. ^ EFFECT: produced waffles have improved consistency and coffee taste and flavour with no coffee added to the formula.
